Some rice noodles are often also referred to as rice sticks or rice stick noodles. These are commonly used in Thai cooking, including traditional soups, stir-fries and, most notably, pad Thai. Dried rice sticks are flat rice noodles that are available in varying thicknesses, coming in 1mm, 3mm, 5mm and 10mm varieties. 

Most rice sticks should be soaked in water before being cooked or added to your dish.

 

why use rice noodles?

Rice noodles get their name from being made with rice flour and water predominantly, although other additions such as corn starch or tapioca are occasionally added to change the flavour or consistency. One of the main benefits of rice noodles over traditional egg noodles is that they are vegan-friendly and gluten-free. Rice noodles are also generally lower in calories, fat and protein than egg noodles.

Dried rice noodles are a hugely versatile ingredient and can be used in stir-fries, broths, soups and many other Asian noodle dishes. They are often combined with pork or shrimp, along with a range of vegetables such as mushrooms, peppers and beansprouts.
